Update php unit test

Adds mcrypt and redis to the PHP unit test container. Our LAMP stack has both installed, and some newer projects are using these extensions

mcrypt extension was deprecated in PHP 7.1 and completely removed on PHP 7.2.

Yep, I forgot to remove it from the 7.2 image when I copy/paste'd the block. 2a605979 removes it from the 7.2 image. Sadly we still have some things using it on 7.1, so I think it should stay on that version.
